Easy Guacamole Deviled Eggs Recipe

These avocado deviled eggs are made with no mayo, so they’re lighter and healthier than the traditional deviled eggs recipe. If you’re looking for an easy appetizer for Easter, Cinco de Mayo, game day or even St Patrick’s Day, you’re going to love these spicy deviled eggs!

We always make a ton of hard boiled eggs at Easter. Instant Pot hard boiled eggs are super easy, and you can make a bunch of them in no time! I use them for potato salad, egg salad and to make stuffed eggs. Even my picky kids, who normally wouldn’t touch an egg without drowning it in ketchup, will happily scarf down some deviled eggs without complaining.

The nice thing about this healthy deviled egg recipe is that you use avocado instead of the traditional mayonnaise, which lightens them up. Plus, the addition of avocado adds so much flavor. Basically, I took my simple recipe for guacamole, made a couple of changes, and used that to stuff the hard boiled eggs.

Ingredients

There are only a few simple ingredients in this easy recipe. Full ingredient amounts are listed in the printable recipe card below.

  • Hard boiled eggs
  • Ripe avocados
  • Lime juice — to prevent the avocados from turning brown
  • Jalapeño pepper — seeded and finely diced. adds a little heat to the filling
  • Spices — sea salt, black pepper and smoked paprika
  • Cilantro — optional, for garnish

How to Make Avocado Deviled Eggs

First, you need hard-boiled eggs. Cook them in the Instant Pot pressure cooker or on the stove, and let them cool down in ice water or very cold water. I used 6 in this recipe.

When they were cool, I peeled them, sliced them in half and scooped the yolks out of the egg whites and into a mixing bowl. Then, I added the avocado and some lime juice.

My little guy helped mash the avocados and the egg yolks. This is a fun way to get kids involved in the kitchen because they always love to mash things up — at least, mine do.

Then, I added a few other ingredients, and the eggs were ready to be stuffed with the avocado mixture. I usually keep things easy around here and use a small spoon, but you can get fancy if you are entertaining and pipe the filling using a piping bag if you want!

Top the eggs with chopped cilantro and a sprinkle of smoked paprika or ancho chili powder for a little extra heat.

How to Store

Refrigerate avocado stuffed eggs in an airtight container for 1-2 days. Even though the lime juice helps preserve the color, the avocado filling will still turn brown.

Substitutions and Tips

You can leave out the jalapeño pepper for a milder version.

If you don’t have limes, you can substitute lemon juice for the lime juice.

And if you are one of many people who think cilantro tastes like soap, substitute chopped parsley for the garnish.

Can you Make Avocado Deviled Eggs Ahead of Time?

I recommend making these yummy deviled eggs the day you serve them to keep the avocado filling as fresh as possible. You can cook the eggs a day or 2 ahead of time and stuff them the day of serving.

Ingredients

  • 6 hard boiled eggs cooled and sliced in half
  • 2 large avocados
  • Juice of 1 lime
  • 1 teaspoon sea salt
  • ½ teaspoon black pepper
  • 1 teaspoon finely chopped jalapeño pepper seeded
  • 1 tablespoon chopped cilantro
  • teaspoon smoked paprika

Instructions

  • Scoop out the avocados, add to a large bowl and add the lime juice

  • Scoop out the egg yolks, place in the mixing bowl, and set the egg whites aside

  • Mash until the mixture is fairly smooth

  • Add the salt, pepper and jalapeño pepper and mix well

  • Fill the egg whites with the avocado mixture

  • Top with smoked paprika and cilantro

  • Refrigerate until ready to serve in airtight container or covered with plastic wrap

Notes

These are best made the day you are serving. If you want to make ahead of time, cook the eggs up to 2 days in advance, and make the guacamole the day you are serving.

You can sub lemon juice for lime juice, parsley for cilantro and omit the jalapeño for less heat.
